📝 Tips for making this rice

  • Make the basmati rice before making the rest of the recipe.
  • Use juicy pineapple chunks for best results. Or you can cut them into smaller pieces.
  • Use a little bit of the juice that comes with the pineapple because it will make of its natural sweet flavor. It’s a great way to offset the jalapenos.
  • Fresh pineapple is better, but, they are too much work, but your hard work will be rewarded in the end. However, canned pineapples are fine when in a pinch.
  • Make sure that you don’t use high heat when cooking the sweet pineapples. It will burn and even char it. Use medium heat throughout the cooking process.
  • The first time I made it, I used olive oil, but, I now make it with avocado oil because it’s high-heat oil. If you don’t have it, use olive oil or coconut oil.
  • Cook it in a large wok for the best experience. I have tried using hot skillet too, but I prefer woks.
  • Top with either fresh cilantro or spring onions.

I only use Stove top Basmati rice because it’s the BEST rice. The rice grains of basmati plump up so beautifully when cooked! You can also cook them in the crock pot, but they take a long time to cook.

But, the best part of this pineapple fried rice recipe is that you can substitute it for any rice type. Try wild rice, arborio rice, jasmine rice, brown rice, red rice, or long-grain white rice.

It’s fine to use leftover rice or day-old rice. However, cold rice should be warmed up first, or keep it on the counter until it is at room temperature. I prefer reheating it in the Instant Pot for a couple of minutes. Once it’s heated, add it to the pineapple mixture.

This pineapple recipe is not the only way to enjoy this amazing fruit. Last week, I made pineapple casserole and it was so very delicious.

Use heat of your choice. If you can only handle black pepper, then use that. Or, use red pepper flakes. This recipe will taste better when it has a little spice. Last time, I tried it with chili garlic sauce and it was heavenly!

Crispy baked tofu, tofu crumbles, or air-fryer tempeh would be a great addition to enhance the protein.
– Add frozen veggies like broccoli.

You can make this rice dinner in advance and reheat it when needed. I like to put 2-3 servings into meal prep containers like these (Affiliate Link) glass storage containers. Then, I take out the containers as needed and it’s so convenient.

If you have leftovers, store them in the same glass containers and refrigerate. Use it within one week because the pineapple will go bad. Do not freeze this rice.
