This is one delicious loaf that everyone will love. It’s so easy to make — mash bananas and mix all ingredients together, that’s it! Perfect for the kids to make. This loaf is sweetened with banana and honey. With no refined sugar, it’s a great healthy lunch box option too. Will keep (unsliced) in an airtight container for up to 5 days. Makes 1 loaf.

Ingredients

½ cupCoconut oil
½ cupLiquid honey
3Bananas, large, ripe, mashed (Main)
2 cupsCoconut threads (Main)
2Lemons, finely grated zest of
1 cupSelf raising flour, or 1 cup buckwheat flour and 1 tsp gluten-free baking powder to make loaf gluten-free
4Eggs
1 pinchSalt

Directions

  1. Heat oven to 180C.
  2. Gently melt coconut oil and honey together in a small pot.
  3. Use a fork to mix mashed bananas, coconut thread, flour, melted coconut oil and honey mixture, eggs, lemon zest and salt together in a large mixing bowl until well combined.
  4. Pour into a greased loaf tin and bake for 1 hour or until a skewer inserted into the middle comes out clean.
